The Tastiest Mince Pies Ever.


Mince Pies. Ewww. Well, that's what I thought until I tried one of these bad boys last year, and oh my, they're amazing! I think the thing that has been putting me off is the thick, dry, shortcrust pastry with a soggy base. No thank you. But, these however, are incredible. They're not stodgy at all and they just taste so buttery and delicious.

To make these I used: 
A jar of ready made mincemeat
A roll of puff pastry
An egg
Icing sugar and caster sugar to sprinkle over the top

Simply, preheat your oven to 180 degrees, and roll out the pastry. Grab a baking tray and line it with some baking paper. Then take a round cutter, and make two circles for every pie - a lid and a base, if you will.

Next, just a quick dollop of mincemeat on the bases. Then place the lids on top, and press the edges together. Brush the beaten egg over the top, to make the pies a lovely golden brown colour when baked. Then score a little cross on the top of each mince pie with a sharp knife, and place in the oven for 12-18 minutes.

Just keep checking on them, until they look baked and delicious. Then, place the mince pies on a wired tray, and sprinkle a dusting of icing sugar/caster sugar on top to taste.

These are probably the least offensive mince pies in the world, they're just so light and buttery!
